I’ve been obsessing over this cucumber mozzarella chicken salad every week and so many of you have been asking for the recipe. It’s such a quick and easy salad and is one of my favorite lunches to eat throughout the week…it’s just SO GOOD.
To simplify all of the chopping, I highly recommend this food chopper and this mini food processor. They have been a game changer for me in the kitchen! I used the chopper to dice the cucumber and tomatoes. Then, I used the smaller chopper attachment to chop the red onion. Then, I used the handheld food processor to chop the fried onions to make them finer so they’d be on each bite.
This salad is full of flavor and even better as it all marinates together in the fridge, so I always make a big batch to eat throughout the week! I typically don’t measure when I cook, but here’s a breakdown of what I typically do.
This is the perfect salad to toss together with random things that you have left in the fridge. I’ve added peppers and green onions before and loved that too! This was my first time adding fried onions and the crunch really elevates the whole dish!
